Kid friendly meals!
My kiddos can be pretty picky when it comes to eating, which is not that surprising since it tends to come with the territory of raising little ones. There are those lucky Mamas out there that have kids that will eat anything, but that is not the case in the Cordova home! Since moving to CO, I have become addicted to cooking and I'm having a blast getting creative with meals. My Moriyah, who happens to be extremely particular with what she eats, has been eating up everything I put in front of her these days and tells me all the time how much she’s loving my cooking!! It’s music to my ears!! Here are some of the favorites lately that my girls go back over and over again for….
Crockpot Chicken Enchiladas
Place the following ingredients into your crockpot and turn on high:
3-4 chicken breasts or 4-6 chicken thighs
¾ cup hot water with chicken bouillon ~ or chicken broth
Add a bit of olive oil
1 diced tomato
½- 1 diced onion (depends how much onion you like)
3 cloves of shredded garlic
Salt/Pepper/Taco Seasoning
*optional- you can also add some of your favorite salsa to the mix!
Let sit in the pot for 4-5 hours and then shred chicken with forks. Taste it here and there so you know if you need to add more seasoning or liquid to keep it saucy! :0)
Enchilada Mix:
Tortillas (Our favorite is Guerrero flour tortillas with the purple label because they aren’t cooked yet so when you toast them they are AH-mazing!!)
Shredded Cheese
Black Olives
Las Palmas green chile sauce (they make the best green sauce but the worst red so just beware! :0)

All Together Now!
On the bottom of your casserole dish, spread some green sauce on the bottom. If you’re using the Guerrero tortillas, toast each tortilla on your pan. Take each tortilla and spread a smidge of green sauce in the middle of your tortilla. Put some of the yummy chicken, shredded cheese, and black olives inside and then roll it on up! Place in your dish and once all your enchiladas are in, top them off with more green sauce and some cheese. Pop it in your oven at 350 for about 30-40 minutes!
This is super yummy and made my 5 year old say, “Mom, this is so amazing! It just makes me wanna dive into it!!”
*Make some fresh guacamole and you’re set!
Turkey Wraps:
Super easy, fast, and my girls gobbled them up and asked for more!
Toast tortilla (Guerrero uncooked in the purple label is scrumptious!)
Spread cream cheese over the whole tortilla
*optional- dice up some yummy cucumbers and add to the cream cheese
Top with some sliced turkey meat (my kiddos like the black pepper turkey)
Roll it up, slice it down the middle and enjoy! Add your kid’s favorite fruit on the side or fresh veggies with dip and it’s a tasty little quick lunch!
Lazy Lasagna:
My kids won’t eat traditional lasagna but they go back for seconds and thirds with this Lazy Lasagna!
Cooked Rigatoni Pasta (or your favorite fun pasta shape)
Browned Turkey Sausage (add onions, garlic, salt, and pepper while you are cooking it)
Ricotta Cheese
Shredded Cheese ( I do a blend of Mozzarella and Sharp Cheddar)
Good ol’ fashioned Spaghetti Sauce ( I prefer the “nothin’ fancy” sauce so it doesn’t take away from all the other yummy flavors.)
All Together Now!
In your lasagna dish, spread some sauce on the bottom and add noodles, meat, plukes of ricotta, shredded cheese, and red sauce. Keep layering until you get to the top and then finish it by covering -with sauce, cheese and parmesan cheese! Pop it in your preheated 350 oven for about 45 minutes and then enjoy!
Garlic Turkey Grilled Cheezers!
This is a tasty lunch that my kids get super excited about! Moriyah always says, “This is the best day ever!” when she eats it! :0)
Wheat or Multi-grain Bread
Yogurt Butter (it’s less fat, tastes great, and it’s spreadable when cold!)
Turkey slices (my girls love the black pepper turkey)
Shredded Cheese (we like sharp cheddar! …mmmmm…)
Garlic Powder/Salt
All Together Now!
Spread the yogurt butter on both sides of the bread and sprinkle garlic powder and salt on top. Toast it on your pan and then add the cheese and turkey. Make your bread smooch each other and toast it up until golden brown!! Add some fresh fruit or veggies on the side and it’s a full meal for little tummies! :0)
Asparagus Spears:
My brother and sister-in-law cooked this up for us a few years ago and we’ve never turned back! Now my Scarlett (2yrs) eats this until she finishes hers and then she moves on to asking for Mom and Dad’s!! She LOVES them!
Take your asparagus spears and add a little water and olive oil to a frying pan. Cover and cook at medium heat for a few minutes. Season with salt, pepper, garlic and onion powder and you’re done!! So yummy and it gets my 2 year old eating her veggies!! :0)
asparagus w/ cumin seeds and lemon juice is another super favorite of mine, but I'm kind of an asparagus kinda guy. Keep on cookin, cooker.

Abbi, you never stop AMAZING me!! You seem to have adjusted well to your new environment and have made your kitchen a creative wonderland!! Sounds like your Moriyah loves her Mommy's new kitchen creations!! I hope you are feeling better too.
