Gluten Free Sweet Sugar Chocolate Crinkles
Recipe
Cookies:
½ cup Butter, Softened (or for dairy free = ½ cup coconut oil, melted)
2 Applesauce snack cups (1/2 cup)
2 tsp Vanilla Extract
¼ tsp Salt
2 tsp Baking Powder
1 cup Brown Sugar
½ cup unsweetened Cocoa powder
1 ⅔ cup GF All Purpose Flour
1 cup (6oz) dark Chocolate Chips
Coating:
½ cup sugar
1 cup confectioners’ Sugar
Directions:
- Mix together the applesauce, butter (coconut oil if using), brown sugar, vanilla, salt, and baking powder in a bowl.
- Melt the chocolate chips in a heatproof bowl in the microwave. You want it just melted.
- Pour in the melted chocolate chips into the mix and stir.
- Add in the Cocoa powder and GF flour ½-1 cup at a time. Mix until all is combined.
- Wrap the top of the bowl in plastic wrap and let refrigerate for 1hr (you can go more if needed). You will need the dough to be refrigerated so you can effectively handle your dough.
- When ready to bake, preheat the oven to 350℉. Using spray oil, spray your cookie sheet(s) and set aside. Then pour the coating sugars into two separate bowls.
- Using a cookie scoop (or a spoon), scoop out the dough and roll each cookie into a ball. First coat the dough ball in sugar, then roll the ball in confectioners’ sugar. Place the coated dough balls on the prepared baking sheet(s) and repeat. You will want a little space (1-2 inches) between the cookies. Repeat this process until: 1. There is no more dough or 2. Your baking sheet(s) is full. (Any leftover dough you can freeze and save as cookie dough)
- Bake for 15 minutes. Allow cookies to cool. Once cooled, serve and enjoy!
